CHOCOLATE-BANANA MINI PIES

Ingredients:

3 ripe bananas, peeled

1 tsp vanilla extract

¼ c peanut butter

½ c dark semi-sweet chocolate, finely chopped (plus ¼ cup for melting and drizzling on top).

5 mini graham cracker crust

Directions:

Step 1:

Place bananas, vanilla and peanut butter in a food processor and puree until they reach a creamy texture. Add ½ cup chopped chocolate and mix one more time.

Step 2:

Scoop mixture into individual pie crust and freeze for at least 2 hours.

Step 3:

When ready to serve, place reserved ¼ cup chocolate in a glass bowl and microwave until melted.

Step 4:

Plate each crisp and drizzle melted chocolate on top of each one and serve immediately.
