PINEAPPLE CHICKEN STIR-FRY

INGREDIENTS:
1 medium red onion, halved lengthwise and sliced
2 teaspoons vegetable oil
3/4 cup thin, bite-size strips zucchini
3/4 cup trimmed fresh pea pods, tips and strings removed
2 teaspoons vegetable oil
2 skinless, boneless chicken breast halves (12 ounces total), cut into thin bite-size strips
1 cup fresh pineapple cubes
3 tablespoons bottled stir-fry sauce
Brown rice (optional)
Fresh pineapple wedges (optional)
DIRECTIONS:
STEP 1:
In a large skillet, heat 2 teaspoons of the vegetable oil over medium-high heat. Stir-fry the red onion in the oil for about 2 minutes.
STEP 2:
Add zucchini and pea pods. Stir-fry for about 2 minutes more. Remove the mixture from the skillet and set aside.
STEP 3:
Add the remaining 2 teaspoons of oil to the hot skillet. Add chicken and cook for about 2-4 minutes or until chicken is tender and no longer pink.
STEP 4:
Add the onion mixture back to the skillet along with pineapple and stir-fry sauce. Cook and stir for 1-2 minutes or until heated through.
STEP 5:
Serve with brown rice and pineapple slices or as is. Enjoy!
